Skin contact for 8 hours. Just free run juice used. 75% cold fermented in stainless steel. 25% fermented in new French oak for 4 months before it was blended to show fresh Semillon fruit with creamy lees character. Bottled under screw cap. Tasting note: Distinctive cool-climate minerality, nettles, fig and dusty dry fynbos express Elim provenance. The small proportion fermented in new French oak has added complexity and length with smokey bacon aromas. Firm acidity for mouth watering freshness. Ideally suited to food, but good enough for solo enjoyment.

About the Winemaker: David Nieuwoudt

David knew from the start that he wanted to be a winemaker at Dwarsrivier, the farm where he grew up. After completing a Diploma in Viticulture and Cellar Technology at Elsenburg, he gained experience at Lievland Estate. Taking charge of the family farm in 1997, he gradually changed the nature of the farm from fruit and tobacco to virus free vines, making wine and expanding the tourism business.

Many wine drinkers only heard about Cederberg Cellars for the first time when David's 2002 Cederberg Shiraz was awarded the Best Red Wine award at The Fairbairn Capital South African Trophy Wine Show in 2004. Today David focuses on Sauvignon Blanc, Chenin Blanc, Cabernet Sauvignon and Shiraz. However, David, like every farmer, has a little surprise up his sleeve - Bukettraube! Who else in the world would be planting 4,8 hectares of Bukettraube, a semi-sweet Alsace variety, in 2008?

Four of David's most recent awards include two Gold medals at the 2008 Concours Mondial de Bruxelles in Bordeaux for the Cederberg Shiraz 2006 & Five Generations Cabernet Sauvignon 2005; and at the Decanter Wine Show, the cellar was awarded two trophies for the Cederberg Shiraz 2006 and Cederberg Sustainable Chenin Blanc 2007.

Despite the accolades, David does not believe in resting on his laurels; there is always more work to be done …
