Lively, vivid lime zest expression with a full ripe mid-palate of passion fruit, mango and a long citrus length.
Vinification: Grapes which originate from sites in Durbanville are harvested at 22o Balling. The vineyards are south - east facing on a vertical shoot positioned trellis. Careful canopy and irrigation scheduling are conducted for optimal fruit expression. After pressing, the must was settled maintaining the temperature at 14o Celsius. Fermentation occurred using a commercial yeast strain. Various finings were added to clarify the wine.
