60% Sauvignon Blanc; 23% Chenin Blanc and 17% Semillon. Aromas of orange blossoms, melons & pears. The barrel influenced aromas of almonds and vanilla compliment the long finish of gooseberries and ripe figs.
WINEMAKERS NOTES:
Handpicked, crushed and de-stemmed. Then rapidly cooled and pressed. Free run and pressed juice are then mixed together under a nitrogen blanket. Wine is pumped into stainless steel tanks, yeast added and fermentation is controlled between 10 and 13 degrees for 21 days.
A small percentage was pressed out and put into barrel for 10-15 days and battonage weekly to extract nutty character.
