Deep with sweet enticing fragrant nose. Sweet violets, lavender, ripe plum and cherry with spicy backing. All repeats in mouth with addition of chocolate and a hint of coffee. Beautifully silky across the palate with juicy supple tannins. Very accessible now after 9 years bottle age.
Bilton Merlot is pressed for three to four weeks in order to extract its characteristic strength, colour and body. After 14-16 months of maturing in small French oak barrels, the wine emerges with a dark, brilliant ruby/mulberry colour with complex flavours of ripe fruit, mint and chocolate.
Due to bottle aging these wines may show sediment and will benefit from decanting.
