Bright lemon yellow with an attractive mix of wood and fruit aromas. The palate has a mélange of luscious fruit and wood characters that make for a balanced but complex range of flavours. It has a medium to long finish that underlines the attractive wood component. A good lunchtime wine to drink with a salad meal like a Salad Nicoise of a firm full flavoured fish.
IN THE VINEYARD: This vineyard is planted on a slope that wraps around from North to East on a variety of soil types. The complexity of this site even though challenging to manage lends these wines exceptional depth and character. To maintain the integrity of our fruit, all our grapes are harvested by hand into small lug boxes, and transported directly to the winery. All our vineyards are planted high density and have low to very low yields and are managed according to minimal intervention philosophy.
IN THE CELLAR: Grapes were hand picked, crushed directly into press. Free run and press juice mixed and after the addition of yeast racked directly into the barrel. 25 % was kept back and fermented in stainless steel to retain freshness. After fermenting the wines were all stirred by hand once a week. The wine was cold stabilized and sterile filtered pre-bottling. We endeavour to bring our fruit to the bottle in the most direct and pure fashion possible, and in this way express our terrior.
