Chicken:
Roast chicken will go with anything as long as it’s not too oaky and not too tannic. If spicy then go with a fruity white or Pinotage. Smoked chicken will go well with a smoky white – a wooded Chardonnay. Semillon is also a good choice with chicken satay; chicken stir fry and Thai.
Game Birds: Rosé, Pinot Noir or a Bordeaux style blend. The darker the meat the darker or stronger the wine. Guinea Fowl will go well with Pinot Noir, Merlot or a powerful Chenin Blanc and Cape blends
Duck: Pinot Noir, bubbly, off dry whites (especially when served with fruit), some Shiraz
Turkey: Rich smooth Shiraz or a good Chardonnay.
