A variety of red cultivars were selected from Boschendal’s finest vineyards and harvested at lower sugar levels to achieve the bracing freshness required for the making of the base wine for a fine Méthode Cap Classique.
After pressing the red grapes, the juice was bled from the grapes immediately and blended with 15% Chardonnay, resulting in the unique sunset-salmon hue of the base wine. The base wine was bottled under crown-cap where it underwent secondary fermentation, spending 12 months on the lees before disgorgement. The lees contact allowed the wine to grow in complexity, adding depth and a pronounced fruit structure, as well as a seductive brisk sparkle.
