An enticing, complex bouquet of capsicum and green fig. Gooseberry and passion fruit flavours introduce a perfectly tapered tail. This wine is delicious alone but is also an ideal food companion. Try pairing it with grilled butterfish on buttered asparagus or salmon fish cakes and sorrel sauce.
Winemakers Notes
Grapes originate from an east facing block of Sauvignon blanc which was planted in 1996 on Doolhof. The fruit was harvested at 20˚B, late January. The bunches were stored in a cold room at 4˚C for 3 days. There after destemming and crushing commenced, and the juice was fermented between 12-14 degrees Celsius until dry. Bottled early May.
